Tasting Notes for the 2006 Blush

This wine is made from Shiraz grapes, picked early to ensure the crisp acidity required for this style. It is crushed and left without pressing for a short period to extract the colour from the skins. It is very important at this stage to ensure that enough colour is taken from the skins but that no tannin is extracted. The must (juice and skins) is checked frequently for colour intensity and flavour. When the colour is achieved the juice is drained off and fermented cool to preserve the aromatic structure of the juice.
